【摘要】 近年来,预制菜产业发展迅速。艾媒咨询数据显示,2021年中国预制菜市场规模为3459亿元,2026年将达10720亿元。预制菜的包装品质,直接影响菜品的质量与安全。丰富多彩的预制菜对包装材料提出了各具特色的要求,包括物理机械性能、阻隔性,以及食品安全性。本文介绍了团队研发或选择的满足不同预制菜要求的包装材料,包括阻隔性优异的多层复合材料、适于回收的单一材质材料、可降解材料和活性包装材料等,研究了包装材料对冷冻、杀菌、复热等多种环境的适用性,以及复杂工况下的食品安全性,揭示了包装材料中危害物如常用粘合剂中的芳香族伯胺等在食品供应链工况中向食品的迁移行为及其影响因素,以确保预制菜的质量与安全、延长其货架期。更多还原

【Abstract】 In recent years,the pre-made food industry has developed rapidly.According to iiMedia Research,the size of China’s pre-made food market was 345.9 billion yuan in 2021 and will reach 1.72 billion yuan in 2026.The packaging quality of pre-made food directly affects the quality and safety of dishes.The variety of prepared dishes has unique requirements for packaging materials,including physical and mechanical properties,barrier properties,and food safety.This report introduces the packaging materials developed or selected by our research team to meet the requirements of different pre-made foods,including good barrier property of multilayer composite materials,single-matrix materials suitable for recycling,biodegradable materials and active packaging materials.The applicability and properties of the packaging materials to freezing,sterilization,reheating and other conditions were studied.In particular,the migration behavior of hazardous substances such as aromatic primary amines(PAAs) in commonly used adhesive and the effects of complex supply chain on the migration were investigated.In short,the most important role of packaging is to ensure the highest quality and safety of packaged products and to extend their shelf life.更多还原
