基于非靶向代谢组学方法的不同消费形式枸杞类胡萝卜素的生物可及性评估

【摘要】 本研究评估了干制枸杞(DRI)、泡水枸杞(WAT)和泡酒枸杞(WIN)中类胡萝卜素的生物可及性,旨在为日常补充类胡萝卜素预防黄斑病变和枸杞产品开发奠定理论基础。通过非靶向代谢组学方法,鉴定了8种类胡萝卜素、3种类胡萝卜素酯和2种类胡萝卜素糖基化的衍生物;建立了体外消化模型对上述3种枸杞中不同类型类胡萝卜素的生物可及性进行了评估。结果表明,DRI的类胡萝卜素的生物可及性最高(28.2%),其次是WIN和WAT(分别为24.9%和20.3%)。在枸杞主要的类胡萝卜素中,二棕榈酸玉米黄质的生物可及性最高(51.8%~57.1%),其次是β-胡萝卜素(51.1%~55.6%)和玉米黄质(45.2%~56.3%)。抗氧化活性测试结果显示,脂质显著提高了类胡萝卜素的生物可及性。基于本研究结果,表现出高生物可及性的干制枸杞能最大限度保留类胡萝卜素,应成为日常食用枸杞的主要消费形式。

【Abstract】 This study assessed the bioaccessibility of carotenoids in dried(DRI),infused(WAT),and wine-infused(WIN) Lycium barbarum L.(LBL),aiming to establish a theoretical basis for daily carotenoid supplementation for macular degeneration prevention and LBL product development.Eight carotenoids,three carotenoid esters,and two carotenoid glycosylated derivatives were identified by a non-targeted metabolomics approach;an in vitro digestion model was developed to assess the bioaccessibility of various carotenoid types in the three aforementioned LBL.The results showed that DRI had the highest bioaccessibility of carotenoids(28.2%),followed by WIN and WAT(24.9% and20.3%,respectively).Among the major carotenoids of LBL,zeaxanthin dipalmitate had the highest bioaccessibility(51.8%-57.1%),followed by β-carotene(51.1%-55.6%) and zeaxanthin(45.2%-56.3%).The results of the antioxidant activity test showed that lipids significantly increased the bioaccessibility of carotenoids.Based on the results of this study,DRI,exhibiting high bioaccessibility to maximize the retention of carotenoids,should be the main form of consumption for daily consumption of LBL.
