养殖暗纹东方鲀肝油的提取工艺及其品质比较分析

【摘要】 养殖河鲀肝脏油脂含量高、不饱和脂肪酸含量多,具有极大的开发利用价值。采用3种方法(蒸煮法、淡碱法、水酶法)提取养殖暗纹东方鲀肝油,评价其理化性质,并运用电子鼻分析其挥发性成分。结果表明:3种方法提取的养殖暗纹东方鲀肝油均呈浅黄色、澄清透明、稍有鱼油腥味;蒸煮法得率(68.92%)最高,水酶法(68.03%)次之,均显著优于淡碱法(63.46%)(P<0.05);水酶法河鲀肝油的碘值(124.892 g/100 g)最高,过氧化值(0.0017 g/100g)最低,酸值(1.143 mg KOH/g)显著高于淡碱法(0.805 mg KOH/g)、低于蒸煮法(2.494 mg KOH/g)(P<0.05),符合SC/T 3502-2016粗鱼油一级标准。电子鼻分析显示:3种提取工艺所得养殖暗纹东方鲀肝油的主要挥发性风味物质为芳香成分(苯类和氨类)以及短链烷烃,蒸煮法河鲀肝油的中长链烷烃气味明显较高。综上所述,水酶法提取养殖暗纹东方鲀肝油的得率显著较高、品质最好。

【Abstract】 The livers of aquacultured pufferfish possess extremely high oil content and abundant polyunsaturated fatty acids,which have great utilization value.Three different methods were applied to extract the oil from the farmed Takifugu obscurus livers,including steam rendering,diluted alkali and aquatic enzymatic method.The physical and chemical properties of the liver oil were studied,and the odor substances were analyzed by electronic nose.The results showed that all liver oil were light yellow,clear and transparent,with a little fishy smell.The yield rate of the liver oil by steam rendering(68.92%) and the aquatic enzymatic method(68.03%) were significantly higher than that of diluted alkali method(63.46 %)(P <0.05).The liver oil using aquatic enzymatic method had the highest iodine value(124.892 g/100 g) and the lowest peroxide value(0.0017 g/100 g),while the acid value(1.143 mg KOH/g) was higher than diluted alkali method(0.805 mg KOH/g) and significantly lower than steam rending method(2.494 mg KOH/g)(P <0.05),which had met the criteria SC/T 3502-2016 of level one crude fish oil.The results of electronic nose analysis indicated that the overall volatile constituents of the liver oil obtained by different extraction methods were mainly aromatic components(benzene and ammonia) and short-chain alkanes.The long-chain alkanes in the oil obtained by steam rendering method were more prominent than the other two methods.In general,the liver oil of aquacultured T.Obscurus by using aquatic enzymatic method had higher yield rate and the best quality.
