六种速溶咖啡的傅里叶变换红外光谱鉴别研究

【摘要】 采用傅里叶变换红外光谱(FTIR)结合二阶导数、聚类分析等化学计量学方法对六种速溶咖啡共30个样品进行鉴别分析。根据各官能团的红外光谱特征峰得出各品牌速溶咖啡的主要成分,选取1 800~1 000cm-1范围原始光谱进行二阶导数处理,并对该范围内的六种速溶咖啡进行相关性分析,得出六种咖啡之间的亲缘关系。利用1 800~1 000 cm-1范围内的二阶导数光谱数据对六种速溶咖啡进行聚类分析(HCA),准确率达到93.3%,结果表明,傅里叶变换红外光谱(FTIR)结合二阶导数、聚类分析的方法可以有效、快速的将六种速溶咖啡区分开来。
【Abstract】 Fourier transform infrared spectroscopy(FTIR) combined with second derivative and cluster analysis were used to analyze a total of 30 samples of six kinds of instant coffee.The second derivative spectra in the range of 1 800~1 000 cm-1,and correlation analysis of six kinds of instant coffee was carried out,The results showed that the infrared spectra of differences in wave numbers and absorption iptensities of peaks were observed in the range of 1 800~1 000 cm-1,Cluster analysis of six kinds of instant coffee was used,the accuracy of clustering analysis reached about 93.3%,the results showed that the FTIR analysis method combined with the second derivative,cluster analysis can effectively and quickly distinguish the six kinds of Instant Coffee.
