蒙脱石稳定的O/W乳状液流变性能调控

【摘要】 蒙脱石作为一种绿色、安全、生物相容的Pickering乳化剂和流变调节剂,在食品、药品和化妆品等领域得到广泛研究。蒙脱石稳定的Pickering乳液的流变性能调控对于其乳剂产品的剂型控制、使用感、功能性和稳定性至关重要。本工作研究了无机盐(NaCl)和天然聚合物(海藻酸钠)对蒙脱石Pickering乳液流变性能的调控作用。结果表明,在蒙脱石Pickering乳液添加1~100m MNaCl和0.01~1%海藻酸钠,可协同增加乳液的粘度和储能模量,这一现象源于NaCl和海藻酸钠对蒙脱石片层颗粒构成的三维黏弹粒子网络的增强作用。此外,Pickering乳液增强的凝胶状特性也起到抑制乳滴聚结、增强乳液稳定性的作用。
【Abstract】 As a green, safe and biocompatible Pickering emulsifier and rheology regulator, montmorillonites are widely investigated in various fields such as food, medicine and cosmetics. The rheological properties of montmorillonite-stabilized Pickering emulsions are critical for the formulation control, usability, functionality and stability of the emulsion products. In this work, the effects of inorganic salts(NaCl) and natural polymers(sodium alginate) on the rheological properties of montmorillonite-stabilized Pickering emulsions were investigated. The results showed that the addition of 1~100 m M NaCl and 0.01~1% sodium alginate to the montmorillonite Pickering emulsion synergistically increased the viscosity and storage modulus of the emulsion. This phenomenon could be attributed to the three-dimensional viscoelastic lamellar particle network strengthened by NaCl and sodium alginate. In addition, the enhanced gelatinous properties of the Pickering emulsion also inhibit emulsion coalescence and thereby enhancing emulsion stability.
