萌发小麦种子的傅里叶变换红外光谱研究

【摘要】 利用傅里叶变换红外光谱结合二维相关红外光谱对萌发的小麦种子进行研究。结果显示,小麦种子的一维原始光谱整体相似,主要由淀粉、蛋白质、脂质的特征峰组成;与对照组(未做萌发处理)相比,萌发小麦的蛋白质和淀粉吸收强度比降低,说明两者的相对含量发生变化。对1 550~800 cm-1范围进行二维相关红外光谱分析,对照组与萌发小麦的自动峰数目不同,最强自动峰强度随萌发程度的加深而降低。结果表明傅里叶变换红外光谱是研究萌发小麦种子的一种快速、简便的方法。

【Abstract】 Fourier transform infrared spectroscopy combined with two-dimensional correlation infrared spectroscopy were used to study germinated wheat seeds.The results showed that the one-dimensional original spectra of varies kinds of wheat seeds were similar,which were mainly composed of the characteristic peaks of starch,protein,and lipid.Compared with the untreated control seeds,the peak intensity ratio of protein and starch absorption of germinated wheat seeds decreased,indicating that the relative content of the two changed.The number of auto peaks of the control and germinated wheat seeds was different in the twodimensional correlation infrared spectra in the 1550~800 cm-1 range.The intensity of the strongest auto peak decreased with the increase of germinating day.The results showed that FTIR spectroscopy was a rapid and simple method for studying germinated wheat seeds.
