白酒辐照熟化机理探究
Research on the mechanism of Baijiu ripening by gamma irradiation

【摘要】 采用UHPLC-Q-Orbitrap HRMS结合食品组学在亲水性HILIC柱和反相C18柱两种模式下考察了以60Co为放射源的不同γ辐照剂量及辐照后不同贮存时间下白酒体系中物质变化,探究了辐照催陈白酒机理并结合感官评定对经辐照后白酒进行判别分析,找出最优辐照条件。试验结果表明:随着辐照剂量增大体系中物质变化逐渐明显,当剂量达到2.832 kGy时体系中化合物含量差异最大。将该条件下的数据以20(%)为组内差异系数阈值,共筛选得到75种显著性差异化合物。其中60种化合物含量升高,包括24种有机酸、16种酯、10种酮、5种醇、3种苯酚类化合物及2两种其它种类化合物。15种含量下降的化合物包括5种有机酸、3种邻苯二甲酸酯类物质、2种酮及5种其它种类物质。经过辐照处理后,随着贮存时间的延长体系内反应逐渐趋于平衡,在28 d时体系达到相对稳定状态。通过对贮存40 d后的辐照酒进行感官评价,证明当辐照剂量达到2.832 kGy时白酒体系感官评价最优,可为辐照技术在白酒生产领域的应用提供参考。
【Abstract】 UHPLC-Q-Orbitrap HRMS combined with foodomics analysis method was used to investigate the changes of substances in Baijiu system under two instrument conditions of hydrophilic HILIC column and reverse C18 column with 60 Co as the radiation source under different y irradiation doses and different storage time after irradiation.The mechanism of irradiation accelerating Baijiu ripening was explored,and the optimal irradiation conditions were found out by combining sensory evaluation experiment.The results showed that the change of the substances in system was more obvious with the increase of the irradiation dose compared with blank sample,and when the irradiation dose reached 2.832 kGy,the difference of the compounds content is the most obvious.Under this condition,75 compounds with significant difference were screened with 20% as the threshold of intra group difference coefficient. The content of 60 compounds increased,including 24 organic acids,16 esters,10 ketones,5 alcohols,3 phenols and 2 other compounds.15 compounds with decreased contents mainly include 5 organic acids,3 phthalate esters,2 ketones and 5 other substances.After irradiation,with the increase of storage time,the reaction in system will gradually tend to equilibrium,and reach a relatively stable state at 28 days.The sensory evaluation of irradiated Baijiu after 40 days storage showed that when the irradiation dose reached 2.832 kGy the sensory evaluation was the best,which could provide reference for the application of irradiation technology in Baijiu production.
