党参蜂蜜中主要成分和活性物质的研究

【摘要】 本研究以产地为甘肃和新疆的党参以及党参蜂蜜、党参花粉为研究对象,采用高效液相色谱法等检测手段,研究了其基本成分(尤其是糖类成分)和生物活性成分(酶类、黄酮、皂甙、酚酸)的组成及含量,旨在为党参蜂蜜的品质评定提供理论依据,主要结果如下:(1)新疆党参蜂蜜中的淀粉酶值为(31.31±2.89) mL/(g·h),蔗糖转化酶值为(167.33±35.39)mg/(g·h),分别显著高于甘肃党参蜂蜜中淀粉酶和蔗糖转化酶的酶值。甘肃党参蜂蜜相比于新疆党参蜂蜜,成熟程度较低。新疆党参蜂蜜和甘肃党参蜂蜜的基本成分组成相似,主要包括总糖、总蛋白以及总皂苷等,而含量相差较大。(2)党参蜂蜜和蜜源党参中的糖类组成相关性不大,不能作为评价党参蜂蜜的理论基础。甘肃党参蜂蜜中果糖含量约为葡萄糖含量的2.2倍,新疆党参蜂蜜中葡萄糖和果糖的含量没有显著性差异。(3)党参蜂蜜中检测到了党参中的某些特征物质,发现党参蜂蜜和党参活性成分组成有一定的联系。党参蜂蜜和党参花粉中都含有少量党参重要成分皂苷,甘肃党参蜂蜜的总皂苷含量(8.03±0.21) mg/g高于新疆党参蜂蜜(7.19±0.33) mg/g。(4)党参蜂蜜总黄酮和酚类物质含量分别为(363.33±19.62)μg/g以及(202.18±10.78)μg/g。由相关性分析可知:黄酮、酚酸类物质的含量和党参蜂蜜的抗氧化性呈正相关。
【Abstract】 In this study,Codonopsis,Codonopsis honey and Codonopsis pollen produced in Gansu and Xinjiang Province were used as the research subjects.The basic components(especially carbohydrate components) and biologically active components(enzymes,flavonoids,saponins,phenolic acids) were determined by high performance liquid chromatography and other detection methods.The composition and content of flavonoids,saponins,and phenolic acids were analyzed and compared,aimed to provide a theoretical basis for the quality evaluation of Codonopsis honey.The main results are as follows:(1) The activity of amylase in Xinjiang Codonopsis honey is(31.31±2.89) mL/(g·h) and the content of sucrose invertase is(167.33 ±35.39) mg/(g·h),which are significantly higher than those in Gansu Codonopsis honey.Compared with Xinjiang Codonopsis honey,Gansu Codonopsis honey has a lower degree of maturity.The basic components of Xinjiang Codonopsis honey and Gansu Codonopsis honey are similar,mainly including total sugar,total protein and total saponins,but the content is quite different.(2) The carbohydrate composition of Codonopsispilosula honey and the honey source Codonopsispilosula has little correlation and cannot be used as a theoretical basis for evaluating Codonopsispilosula honey.The content of fructose in Gansu Codonopsis honey is about 2.2 times as much as glucose.There is no significant difference in the content of glucose and fructose in Xinjiang Codonopsis honey.(3) Some characteristic substances in Codonopsis were detected in Codonopsis honey,and it was found that Codonopsis pilosula honey had a certain correlation with the active components of Codonopsis.Codonopsis honey and Codonopsis pollen both contain a small amount of saponins,which are important components of Codonopsis.Gansu Codonopsis honey contains(8.03±0.21) mg/g total saponins,which is higher than total saponins in Xinjiang Codonopsis honey(7.19±0.33)mg/g.(4) The contents of total flavonoids and phenols in Codonopsis honey were(363.33±19.62) μg/g and(202.18 ±10.78) μg/g,respectively.The correlation analysis shows that the content of flavonoids and phenolic acids is positively correlated with the antioxidant activity of Codonopsis honey.
