鲜切‘突尼斯软籽’石榴籽粒保鲜研究

【摘要】 本文以郑州荥阳主栽石榴品种’突尼斯软籽’为试验材料,研究热处理、真空包装和充气包装对鲜切石榴籽粒耐藏性的影响。本试验热空气处理在40℃、45℃和50℃三个温度条件下进行,处理时间均为1h;真空包装处理外抽式真空(充气)包装机设置三种不同真空度;充气包装设置25%CO2+75%N2混合气体、纯CO2和纯N2三种气体条件。处理后置于(5±0.5)℃条件下,定期观察各处理石榴籽粒的品质变化,并对其籽粒感官品质进行评价,测定相对电导率、失重率以及可溶性固形物含量、可滴定酸含量、花色苷含量、色泽等指标。研究认为:40℃热空气虽能够抑制’突尼斯软籽’相对电导率和pH的上升,并能有效的保持SSC、可滴定酸和花色苷含量,但热空气处理大大缩短了其贮藏寿命,’突尼斯软籽’石榴各热空气处理后的贮藏寿命分别为:3d、Od和Od,而CK可达12 d,因此,热空气处理不建议用于’突尼斯软籽’石榴籽粒的采后处理。一定的真空度处理能够抑制’突尼斯软籽’石榴籽粒相对电导率的上升,并能更好地维持花色苷、可滴定酸的含量,贮藏寿命(18d)较CK(12d)延长了6d。纯氮气体包装能抑制石榴籽粒pH和电导率的上升,并能保持可滴定酸含量,贮藏寿命(15d)较CK(12d)相比延长了3d。

【Abstract】 In this paper,the arils of ’Tunisiruanzi’ pomegranate were treated with different postharvest method to study their effects on the aril quality during storage.The heat treatments(hot air treatment)were designed three levels as 40℃、45℃、and 50℃ for one hour,respectively.Vacuum packaging treatments were completed by DZQ series pumping vacuum packaging machine at 1.5,2 and 2.5 three different degrees of the machine,respectively.Aerating packaging treatment was carried out by pumped into mixed gas(25% CO2+75% N2),pure CO2 and pure N2.After treatments,the arils were stored at(5±0.5)℃.The sensory quality were observed regularly,and the relative electrolytic conductivity,weight loss,soluble solids content,pH,titratable acid content,anthocyanin content and it’s color value were evaluated to study the treatments effects on aril quality to find an effective treatment to extend the pomegranate arils storage life and maintain its fresh quality.The results showed that although the 40℃ hot air treatment can inhibit the rise of relative conductivity and pH,and maintain the SSC,TA,and the content of anthocyanin,but it shortens the storage life greatly.After the hot air treatments,the storage time are 3d,Od and Od,respectively,while CK is up to 12d.So,the hot air treatment is not recommended for the pomegranate aril postharvest treatment.Appropriate vacuum packaging treatment can inhibit the rise of relative electrolytic conductivity,and can maintain the anthocyanin content and TA,more importantly,the storage time(18d) prolongs 6d than ck(12d).Pure N2 package can not only inhibit the rise of pH and relative electrolytic conductivity,but also maintain the TA,for the storage time,it can prolong the time 3d than CK(12d).
