渗透对压差闪蒸胡萝卜脆条质构调控研究

【摘要】 压差闪蒸干燥能引起果蔬质构重组,制备口感酥脆的果蔬脆片,渗透处理能调控干燥过程质构变化,有效提高压差闪蒸果蔬脆片质构品质。为探究渗透对压差闪蒸果蔬脆片的质构调控作用,本文以胡萝卜为原料,研究了在高温渗透(98±2℃)条件下渗透液浓度(麦芽糖醇,20-60°Brix)和渗透时间(0-21 min)对胡萝卜脆条孔隙形成及感官品质的影响。结果表明:固形物增量与压差闪蒸胡萝卜脆条体积显著相关(R~2=0.9573),固形物增量达0.15 g/g以上时,嘭化效果最佳;Micro-CT扫描显示,渗透条件对脆条微观结构影响显著(P<0.01),胡萝卜脆条孔隙分布和孔间壁厚分布均随渗透时间的延长而分散,随固形物的增加而集中;经60°Brix渗透4-6 min制备的胡萝卜脆条,孔隙及壁厚分布均匀,整体质构品质最优,感官评分达4.47。研究为压差闪蒸胡萝卜脆条的制备提供了技术和理论依据。
【Abstract】 Instant controlled pressure drop(DIC) as a novel drying method can significantly induce the reconstruction of texture of fruit and vegetable chips,resulting in a desirable texture and crispy mouth-feel.Osmotic pretreatment(OP) is an effective processing unit used before DIC to improve the overall qualities of final products.In present study,the effects of osmotic conditions including solution concentration(20-60 °Brix) and osmotic time(0-21 min) on the volume,texture,microstructure,color and sensory qualities of DIC-dried carrot chips were investigated.The results confirmed that the expanded volume of the DIC-dried samples was highly dependent of the solute gain(R =0.9573),and a threshold of SG(about 0.14 g/g,wb) was found to achieve well expanding.According to Micro-CT tomography analysis,the microstructural characteristics of the samples were substantially affected by OP conditions,and the distribution range of pore size and cell wall were broadened with increasing of osmotic time,while narrowed with increasing of solid gain.Furthermore,sensory evaluation showed that the samples appropriately pre treated(e.g.60 °Brix for 4 min or 6 min) were of great overall quality and the score reached 4.47.Overall,the controlled osmotic processing could be used as an excellent pretreatment for modulating the volume expansion and microstructure of DIC-dried carrot chips,thus supply a theoretical and technical support for chips industry.
