红枣老化黑变枣加工工艺研究

【摘要】 本实验以宁阳圆铃枣为原料,通过控温控湿高温熟化生产黑枣。通过单因素试验和正交试验,以红枣老化黑变过程中cAMP、5-HMF、黄酮、多酚、总酸、还原糖、水分等含量的变化为依据,对黑枣加工工艺的影响因素:黑变温度、黑变时间、加水量进行了优化。同时将黑枣与红枣各营养成分进行对比分析。结果表明:黑枣的最佳工艺条件为:黑变温度为75℃,黑变时间为55 h,加水量为150 mL。在最佳工艺条件下得到的黑枣枣香浓郁、酸甜可口,各功能物质含量可达(干物质计):蔗糖0、cAMP0.0137g/100g、5-HMF0.103g/100g、黄酮0.12g/100g、多酚2.71g/100g、总酸17.09g/kg、还原糖76.7g/100g、水分含量26%。与红枣对比分析可知,黑枣蔗糖降低,糠醛、还原糖、总酸、多酚等含量升高。黑枣生物活性物质及糖组分的变化使其适用性更广,不仅弥补了红枣高蔗糖的缺陷,其抗氧化能力及营养价值更优于红枣,更加适用于现代人群的营养健康要求,而且填补了国内老化黑枣市场空白,有利于拓宽红枣精深加工领域,实现山东省优势资源红枣的综合利用。

【Abstract】 This experiment is based on the use of the jujubes from ningyang,which is to make the black jujube by temperature-controlled wet high temperature curing.By single factor test and orthogonal test,based on the changes in the element content of red jujube aging process,such as cAMP,5-HMF,flavonoids,polyphenols,total acid,reducing sugar and so on,the influence factors of the aging of the red jujube dateplum presimmon processing technology,such as black change temperature,dark time,water content was optimized.Results show that the optimum process conditions of red jujube aging black:black variable temperature is 75 ℃,dark time for 55 h,add water is 150 mL.Under the best technological conditions,the black date jujube is fragrant,sweet,sour and delicious,and the content of all functional substances can reach:cAMP 0.0137 g/100 g,5-HMF 0.103 g/100 g,flavone 0.12 g/100 g,polyphenol 2.71 g/100 g,total acid 17.09 g/kg,reducing sugar76.7 g/100 g,moisture content 26%.Compared with red jujube,the content of black jujube sucrose was reduce,5-HMF,reducing sugar,total acid and polyphenol were increased.Black jujube as a result of the change of biological active substances and sugars in its applicability,not only makes up the defect of the red jujube high sucrose,its antioxidant capacity and nutritional value is more better than the red jujube,more suitable for modern people’s nutritional health requirements,and fills the blank of aging black market in domestic,is conducive to expanding the area of deep processing of red jujube,realize the comprehensive utilization of red jujube advantage resources in Shandong province.
