不同加工方式牡蛎对高脂喂养的小鼠降血脂及抗氧化活性的影响

【摘要】 摄食牡蛎及其蛋白酶解产物的功能已广泛受到关注。我们假设牡蛎因酶解、热杀菌等过程中导致其所含有的蛋白质或多肽、多糖等成分发生的改变,会影响其在体内的降血脂作用及抗氧化活性。本研究首次将不同加工方式制备的牡蛎(未酶解牡蛎粉,酶解牡蛎粉,热处理酶解牡蛎粉)按5%蛋白含量添加到45%高脂饲料中喂养C57BL/6小鼠8周,分别为5%OS+HF组,5%OHS+HF组和5%HOHS+HF组,检测小鼠的脂质代谢,抗氧化特性,肝功能和肝组织中脂蛋白代谢酶的活性研究其对预防高血脂症的潜力的影响。结果表明,MJ组可以有效降低体重,改善脂质,增加抗氧化酶和肝脂酶的活性,显著降低血清中TC,TG的含量,同时,它可以有效预防肝损害。但HOHS组效果并不好,可能与其热处理反应影响其抗氧化活性相关,这表明MJ组可在饮食中用于预防和控制高脂肪饮食诱导的高脂血症,而高温热处理会降低抗氧化活性和降血脂能力。

【Abstract】 The biological activity about the intake of oyster products has been widely concerned.In this study,we hypothesized that changes due to the processing treatments may affect their hypolipidemic and antioxidant activities in vivo. C57BL/6 mice were fed a high-fat diet added with freeze-dried oyster products by three different treatment(original oyster(OS),oyster protein hydrolysate(OHS),hot-processed OHS(HOHS)) for 8 weeks,respectively.Subsequently,the body weight,organ indices,lipid metabolism,antioxidant properties and liver functions of the mice were examined.Moreover,the activities of lipoprotein metabolism enzymes in serum and liver tissue were examined to study the feasible mechanism.The results imply that OHS could effectively reduce body weight,total cholesterol(TC),triglyceride(TG).In addition,OHS also increased the antioxidant enzymes activities of glutathione peroxidase(GSH-PX) and reduced malondialdehyde(MDA),and the liver damage indices were lowered.The hypolipidemic effect occurred partly due to the regulation of hepatic lipase(HL) and lipoprotein lipase(LPL) to markedly decrease TG.However,the HOHS group did not work well and may be associated with decreased antioxidant activity.This indicates that the OHS group could be used in the diet to prevent and control hyperlipidemia induced by high-fat diet,while high-temperature heat treatment affects its activity.
