养殖模式和阶段对大黄鱼(Larimichthys crocea)形态,色泽和营养成分的影响

【摘要】 为了评估大黄鱼(Larimichthys croceas)的生长性能和营养成分,将来自不同生长阶段的三种水产养殖模式(围网-S;深水网箱-D;筏式小网箱-R)的养殖鱼与野生鱼进行比较;观察肥满度、色泽、近似成分、脂肪酸和氨基酸的差异性。结果显示:野生鱼肥满度小于养殖鱼。表皮色泽,野生b*值大于养殖鱼(S1、S2、D2除外)。野生鱼粗脂肪含量均低于养殖鱼,且差异显著(P<0.05)(除S2);粗蛋白含量均大于养殖鱼,差异显著(P<0.05)。野生和养殖大黄鱼ΣSFA>ΣMUFA>ΣPUFA。野生鱼ΣSFA、ΣMUFA高于养殖鱼,差异显著(p<0.05);ΣPUFA低于养殖鱼,差异显著(p<0.05)。野生鱼TAA,NEAA和EAA比养殖鱼(除R1)含量高,养殖鱼TAA、EAA、SEAA和NEAA均呈先升后降趋势。结果表明,经过6个月分阶段的围网和深水网箱养殖,养殖鱼的生长性能,颜色,近似成分,脂肪酸和氨基酸均明显优于筏式小网箱大黄鱼,大黄鱼的综合品质显著改善。
【Abstract】 To evaluate the morphology, color and nutritional composition of large yellow croaker(Larimichthys croceas), cultured fish from three culture models(seine-S, deep-water cages-D, raft cages-R) at the initial(summer), third(autumn) and sixth(winter)(0, 1, and 2, respectively) cultured month were compared to wild fish(W); the condition factor(CF), color, proximate composition, fatty acids and amino acids were observed. The results showed that the wild large yellow croaker had lower CF than the cultured fish. Regarding the skin color, the yellowness(b*) value was greater than that of cultured fish(except for S1, S2, and D2). Wild fish crude fat content was significant lower than that of cultured fish(P < 0.05)(excluding S2). The crude protein content of wild fish was significantly greater than that of cultured fish(P < 0.05). The amounts of fatty acids of both wild and cultured large yellow croaker were found in the following decreasing order: Σ saturated fatty acids(SFA)>Σ monounsaturated fatty acids(MUFA)>Σ polyunsaturated fatty acids(PUFA). The ΣSFA and ΣMUFA of wild fish were higher than those of cultured fish. The ΣPUFA of wild fish was significantly lower than that of cultured fish(P < 0.05). Total amino acids(TAA), non-essential amino acids(NEAA) and essential amino acids(EAA) of wild fish were higher than those of cultured fish(excluding R1). The TAA, EAA, semi-essential amino acids(SEAA) and NEAA of cultured fish showed a rising trend first and then decreased. It was concluded that the morphology, color, proximate composition, fatty acids and amino acids of seine and deep-water cage phased imitation eco-cultured fish at the sixth month were significantly greater than those of R model fish; the comprehensive quality of large yellow croaker was improved remarkably.
