适配体传感分析技术:食品安全检测的新选择

【摘要】 食品安全问题依然严重影响人民身体健康和国家经济发展,如何快速灵敏有效地检测出食品相关的特别危害已成为控制食品安全问题及保证消费者安全的关键。传统检测技术存在操作繁琐耗时、检测灵敏度低、需要专业操作技能等缺点,发展新型检测技术已经引起了广泛的关注。核酸适配体是一类体外合成的核酸序列,能够特异性地识别小分子、毒素、蛋白质、细胞甚至致病菌等。基于核酸适配体的传感检测技术具有稳定性好、操作简单及高灵敏等优点,克服了食品安全传统检测技术的不足。本文综述了基于核酸适配体的传感检测技术在快速检测食品中致病菌、致敏原、毒素、非法添加物及掺杂物的应用研究进展,并展望了核酸适配体传感技术未来的发展方向及挑战。随着核酸适配体筛选技术和方法的不断发展和完善,对核酸适配体传感器的设计、分析特性和稳定性的不断改善,基于核酸适配体的传感检测技术将会在食品安全检测领域取得重要发展。
【Abstract】 Food safety issues still seriously affect people’s health and the national economic development.How to availably identify specific hazards associated to food fast and sensitively has become the key to ensure food safety andguarantee consumer protection.Since the traditional methods for food safety have drawbacks in terms of laborious and time-consuming work,low sensitivity,and expert technical skill,the development of new detection technologies have attracted tremendous attention.Aptamers are short single-stranded oligonucleotides that can bind specifically to small molecules,toxins,proteins,virus and pathogens with high affinity.With the advantages of good stability,simple operation and high sensitivity,aptamer-based sensing technology can overcome many disadvantages of traditional detection methods in food safety.This review provides an overview of the latest advances in various aptamer-based sensing methods for rapid detection of pathogen,allergy,toxin,illegal contaminants and adulterants in food.In addition,the new trends and challenges in the development of aptamer-based sensing technologyare also discussed.With the development and improvement of aptamer screening technologies and methods,the improvement of the design,analytical characteristic and the stability of aptamer-based sensors,aptamer-based sensing technology will achieve significant advances in the field of food safety detection.
