【摘要】 为了解玫瑰石斛花朵的营养价值,本研究主要分析了玫瑰石斛花朵中多糖、总酚、总黄酮、水溶性浸出物等营养成分,利用自动氨基酸分析仪对其氨基酸进行检测,并通过氨基酸比值系数法对其营养价值进行了评价。结果表明,玫瑰石斛盛花期的多糖含量为8.9%,与初花期和微开期差异不显著。盛花期花中的总酚、总黄酮和水溶性浸出物含量分别为1.67%、1.57%和52.5%。花中含有16种氨基酸(含7种必需氨基酸),干花中氨基酸总量为53.62g/kg,人体必需氨基酸占氨基酸总量的37.5%,接近WHO/FAO推荐的必需氨基酸模式。药效氨基酸含量达到氨基酸总量的65.3%,而鲜味氨基酸含量则达到氨基酸总量的27.2%。氨基酸比值系数分(SRC)为57.65,第一限制氨基酸为蛋氨酸+胱氨酸。综上所述,大花黄牡丹具有较高开发利用价值。更多还原

【Abstract】 To evaluate the nutritional values of Dendrobium crepidatum flowers,the contents of polysaccharides,total flavonoids,total polyphenols and water soluble extract in flowers were determinated,and their amino acids were also analyzed by automatic amino acid analyzer,the nutritional values were evaluated by amino acid ratio coefficient The results showed that polysaccharide content at full-bloom stage was 8.9%,and it was insignificant with budding stage,and slightly opening stage.The contents of total polyphenols,total flavonoids and water soluble extract were 1.67%,1.57% and 52.5%,respectively.The flowers contained 16 amino acids(including 7 essential amino acids),and total contents of amino acids in flower were 53.62 g/kg,which was closed to WHO/FAO recommended model.In addition,the medicinal amino acids accounted for 65.3%,and the umami tasty amino acids accounted for 27.2%.The score of ratio coefficient were 57.65,with methionine and cysteine were the first limiting amino acids.It was concluded that the flowers of D.crepidatum had higher nutrition and utilization value.更多还原
