【Abstract】 Common Fenugreek seed is a traditional Chinese medicine and can grow in many places of China.Common Fenugreek seed contains many medicinal components as saponin,alkaloids,flavonoids etc,and possesses such functions as lowering blood fat and blood sugar.Furthermore,there are plenty of nutritional components i.e.protein,oil,polysaccharide,vitamins and mineral elements in it,and it finds wide applications in food,medicine,health products and cosmetic industry.The nutritional components in Trigonella foenum-graecum L.especially in its seeds are introduced in this paper,so as to provide basis for its further development.更多还原
