【摘要】 以正山小种、金骏眉、斯里兰卡、滇红四种红茶为研究对象,采用顶空固相微萃取法结合GC-MS分析,对这四种红茶的挥发性成分进行定性、定量研究,共检测出香气物质56种,其中大部分为醛类和醇类。并利用主成分分析(PCA)对四种红茶的挥发性成分进行分析,找出与其相关的挥发性成分。更多还原

【Abstract】 The volatiles of four kinds of black tea(Lapsang Souchong,Jin Jun Mei,Sri Lanka,Dianhong)were identified and quantified by SPME(solid phase micro-extraction) coupled with GC-MS.A total of 56 aroma components were detected in the samples,mostly aldehydes and alcohols.And then principal component analysis(PCA) was applied to identify and find out its correlation with volatile components.更多还原
