水产品微生物预测与智能化评价研究进展

【摘要】 对水产品品质和安全微生物预测及智能化评价技术的发展概况、研究方法、应用领域、存在问题及发展趋势等进行了概述。预测微生物学采用数学建模描述目标微生物在多个因子影响下的生长、残存、失活等活动规律,包括目标微生物基本特征库、数学模型库和专家系统等内容,并对水产品智能化评价的原理、类型和应用及发展前景进行了阐述,以期为数字化描述水产品目标微生物活动规律,智能化评估水产品品质和安全风险等提供了支持。
【Abstract】 Quality, safety prediction and intelligent evaluation of fishery products were summarized,including development history, research methods, application field, existing problems and developmen t trends, etc. Predictive microbiology describes by mathematical models that growth, survival and in activity of targeted microorganism; under Multifactor conditions, including basic characteristics, math ematical models and expert systems. The principle, type,application and development future of intel ligent evaluation system were also summarized, it may provide the supports for Digital descripting mechanics of targeted microorganism of fishery products, intelligently evaluating safety and risk pr obability of fishery products.
