卡特兰不同花期的香气成分及其变化

【摘要】 采用活体植株动态顶空套袋一吸附采集法与GC/MS(气相色谱/质谱联用)分析技术,研究了卡特兰‘大新1号’的香气成分及不同花期的香气变化规律。结果表明:卡特兰花蕾期的香气组成成分有42种,始花期有39种,盛花期有66种,衰落期有56种;随着花朵的开放,烯类化合物的相对含量呈先上升后下降的趋势,烷烃类和苯类化合物的相对含量总体呈上升趋势,醇类和醛酮类化合物的相对含量总体呈下降趋势。从感官分析与GC/MS的测试结果综合判断,烯类物质是影响卡特兰香气的重要化合物,3,7-二甲基-1,3,6-辛三烯、α-蒎烯、β-月桂烯、D-柠檬烯、苯甲醛、苯甲酸甲酯是卡特兰‘大新1号’的特征香气化合物。
【Abstract】 The changes of aroma components in Rhyncholaeliocattleya King of Taiwan ’ Ta Shin#1’ in different florescence were analyzed by dynamic headspace collection and TCT- GC/MS.The results indicted that there were 42 components at bud stage,39 at first flowering dates,66 at flowering stage and 56 at declining period.With the flower blooming and senescence,the contents of alkenes raised first and then decreased,the contents of alkanes and benzene raised,alcohol and aldehydes decreased.On the basis of organoleptic evaluation and GC/MS results,alkenes was the most important compounds for ’ Ta Shin#1’ volatile.3,7-dimethyl- 1,3,6-Octatriene,Alpha.-pinene,Beta-myrcene,D-limonene,Benzaldehyde,Benzoic acid methyl ester were the characteristic constituents of aroma.
