辐照处理对谷物中真菌毒素污染的控制

【摘要】 采用60Co-γ射线辐照黄曲霉毒素B1、玉米赤霉烯酮和赭曲霉毒素A纯品水溶液、大米和玉米,研究了辐照对大米和玉米中黄曲霉毒素B1、玉米赤霉烯酮和赭曲霉毒素A及水溶液中这3种毒素的降解效果。结果显示,黄曲霉毒素B1、赭曲霉毒素A和玉米赤霉烯酮的降解率随着辐照剂量的增加而增加;在4 kGy的辐照剂量下,降解率分别达到95%、90%、11%,当剂量增加到6 kGy时,降解率分别达到94%、90%和60%以上,此后降解率的增长随着辐照剂量的增加而趋于缓慢。大米和玉米中黄曲霉毒素B1、赭曲霉毒素A和玉米赤霉烯酮的降解率亦随着辐照剂量的增加而增加;在4 kGy的辐照剂量下,降解率分别达到42%、99%、85%,6 kGy时其降解率均可达到84%以上,此后降解率的增加随着辐照剂量的增加也趋于缓慢。γ射线辐照对3种真菌毒素具有良好的降解效果。
【Abstract】 Degradation of aflatoxin,zearalenone and Ochratoxin was studied,using rice,corn and solution of aflatoxinB1,zearalenone and OchratoxinA standards irradiated by γ ray.The results shows that the degradation ratios of aflatoxinBl,zearalenone and OchratoxinA standards in solution increased with the increasing irradiation doses,the degradation ratios of them were 95%,90%and11%when the irradiation dose was 4 kGy,and the ratios were more than 94%,90%and 60%when the dose wae increased to 6 kGy,then,the degradation ratios of them did not change more even the dose was increased.The degradation ratios of aflatoxinB1,zearalenone and OchratoxinA in rice and corn increased with the increasing irradiation doses also,the degradation ratios of them were 42%,99%and 85%when the irradiation dose was 4 kGy,all ratios were more than 84%and would not increase much when the dose was more than 6kGy.Above all,good degradation ratios of aflatoxinB1,zearalenone and OchratoxinA have been got by γ ray irradiation.
