烹调烟雾对机体免疫功能的影响

【摘要】 [目的]通过对烹调烟雾职业暴露人群外周血免疫指标的测定来了解烹调烟雾对机体免疫功能的影响。[方法]分别通过直接荧光法、MTT比色法、放射免疫分析法、双抗体夹心ABC-ELISA法分析人外周血T、B淋巴细胞亚群、自然杀伤细胞(NK细胞)活性、白细胞介素-2(IL-2)、γ-干扰素(IFN-γ)水平。[结果]经成组t检验,暴露组CD3+细胞百分率、NK杀伤率明显低于对照组(P<0.01),工龄7年以上被调查者中暴露组CD4+CD8-T细胞百分率、CD4+/CD8+细胞比值明显低于对照组,而CD19+细胞百分率、IL-2、IFN-γ水平两组间著异无统计学意义。[结论]长期接触烹调烟雾对机体细胞免疫功能有一定抑制作用。

【Abstract】 [Objective] To inquire the effects of cooking oil fumes on the immune system function by determination the immunological index for cell-mediated immunity in peripheral blood of cooking workers. [Methods] T lymphocyte subtypes and B lymphocyte cells were determined by the method of immunofluorescence assay using fluorescence activated cell sorter(FACS). NK cell activity was measured by the method of MTT reduction assay. Serum IL-2 levels was determined with radioimmunoassay. IFN-γ levels in serum was etermined by usding an ABC-ELISA kit. [Results] The results showed that the proportion of T cells and the activity of NK cell in the exposed group were obvious lower than those in the controls(P<0.01). Meanwhile, the same results were exhibited on the percentage of CD4+CD8-T cells, the CD4+ /CD8+ ratio between the exposed group working longer than 7 years and controls(P<0.05). The proportion of B cells, IL-2 and IFN-γ levels in serum, however, showed no much differences between the two groups(P>0.05). [Conclusion] The cell-mediated immunity function was inhibited by touching with a lot of cooking oil fumes with a long time.
