低温物流过程中果蔬贮藏期预测器的研制

【摘要】 生鲜产品低温物流过程中的安全管理是实现低温物流体系的关键,其中包括实现产品贮藏期的预测和即时管理。基于热力学中的能量守恒原理,推导了基于0℃贮运条件下剩余贮藏期的计算式。结合现有的实验数据,在温度范围为 0℃至20℃内,给出了8种蔬菜贮藏期与贮藏温度的之间的关系式和在0℃贮运条件卜的贮藏期预测方程。经过芹菜在0℃、 2℃、4℃、6℃和8℃的储藏实验证明,理论推导出的芹菜贮藏期与贮运温度之间的关系式所计算的贮藏期与实验所得到贮藏期相差时间不超过2天。并综合信息无线发送技术,开发了具有库存管理功能的果蔬贮藏期预测器。实际运用结果表明, 基于能量守恒原则所开发的果蔬贮藏预测器预测结果具有较高的精度,在生鲜产品的低温物流过程中具有较好的运用前景。
【Abstract】 The safety control is the key in the cold chain of flesh products,which includes the prediction of the store time and the management of the instant temperature.Based on the energy conservation in thermal theory,the calculation equation of the left store time of fresh vegetables and fruits was derived when they were stored in 0℃.Using the present data about 8 kinds of fresh vegetables,the equation about the relationship between the store time and the storing temperature and the equation used to predict the left store time of fresh vegetables stored in 0℃ were obtained,respectively.By the storing experiments the celery at 0℃,2℃, 4℃,6℃ and 8℃,it proved that the store time calculated by the equation was almost the same as the experiments,and the difference was not more than 2 days at each storing temperature.Integrating the wireless technology of sending messages,the predictor of fresh vegetables and fruits with a function of management of storing was developed.The practical application of the predictor shows that the predictor has a fine precision and will have a wide using in the cold chain.
