【摘要】 对含硫香料的主要特点、香味特征和用途,含硫香料的主要类型和品种,含硫香料的发展趋势等问题进行了论述。指出,目前世界范围内允许使用的含硫香料有300多种,中国生产的有100多种。今后二三十年,含硫香料的品种将保持比较快的增加速度,产销量和生产规模将进一步扩大,而价格将逐步降低。更多还原

【Abstract】 The features, odor characteristics and uses of sulfur- containing flavor compounds were reviewed. The major types and typical compounds were introduced. Some issues about the development of sulfur - containing flavor compounds were discussed. The number of sulfur - containing flavor compounds allowed to be used worldwide has exceeded 300. There are over 100 produced in China. The number of sulfur - containing flavor compounds will keep increasing at a moderate to high rate in next 20 to 30 years. The producing scales and sales will be amplified further, and the prices will decrease gradually.更多还原
