3-噻吩硫化物及其衍生物分子结构与香味的关系研究

【摘要】 在对文献报道的3-噻吩硫化物香味特征归纳总结的基础上发现,这些化合物均具有基本肉香味特征。提出了3-噻吩硫化物都应该具有基本肉香味特征的假说。
【Abstract】 A postulate that compounds which contain structural unit, 3 - mercaptothiophene, have a meat aroma was made in this paper, which was based on the reported odor characteristics of all kinds of 3-mercaptothiophene derivatives.
