【Abstract】 The nutritional value of the fruiting bodies of Pleurotus ferulae and P. nebrodensis were assessed using the method adopted internationally. The amino acid score (AAS) , chemical score (CS) , essential amino acid index ( EAAI) , biological value (BV) , nutritional index ( NI) and score of ratio coefficient of amino acid ( SRCAA) of the proteins from fruiting bodies of P. ferulae and P. nebrodensis were 51. 4,52. 1,71. 9,66. 7,11. 30,74. 40 and 60.0,42.9,70.4,65.0,10.35 and 68.39,respectively. Five of the six indexes of P. ferulae were higher than those of P. nebrodensis. The results showed that the protein nutrient value of P. ferulae was much higher. P. ferulae could be, therefore, considered as a good source of the proteins.更多还原
