微波法提取香菇含氮物质最佳工艺条件研究

【摘要】 本试验以香菇为原料,对微波法提取香菇含氮物质的工艺进行了研究。探讨了物料比、微波功率、微波作用时间等因素对香菇提取液氮收率和水解度的影响。通过正交试验, 确定了最佳工艺条件为物料比1:100、微波功率500w、微波时间30min。通过传统蒸煮法和微波提取法的比较试验得知,微波萃取法具有提取率高且节能、省时、操作便利等优点。通过微波消解---原子吸收光谱法分别测定了传统蒸煮法和微波法提取的香菇提取液的 Ca、 Zn、Fe、Mn、Mg 的含量,结果发现除了 Fe 之外,微波提取液中 Ca、Zn、Mn、Mg 的含量要比传统蒸煮法高。
【Abstract】 In this paper,the Lentinus edodes was chosen as raw material.The nitrogenous substances -extracting technology by microwave from Lentinus edodes was studied.The effects of material rate,microwave power and microwave time on hydrolysis rate and recycle rate of nitrogen of Lentinus edodes extract was discussed.By orthogonal experiment,the optimum condition was determined as followed:material rate 1:100,microwave power 500w,microwave time 30min.By comparative experiment between microwave and traditional water extraction method,the results showed that microwave extraction method has the characteristic of higher extraction rate,energy saving,time saving and simple operation.The content of Ca,Zn,Fe, Mn and Mg in traditional water extract and microwave extract from Lentinus edodes was determined by microwave digestion-AAS.The results showed that The content of Ca,Zn,Mn and Mg in microwave extract was higher than that in traditional water extract,except the content of Fe.
