微生物酶在国内食品工业中的应用和发展

【摘要】 微生物酶是微生物生物技术应用和发展的一个重要方面,文章介绍了微生物酶在食品工业中的应用, 并对该技术的发展趋势进行了展望。
【Abstract】 Microbial enzyme was one of the important products of modem bio-technology.The applications of microbial enzymes in food industry were introduced in this paper.And then,the prospects of the enzyme were discussed in the future.
