论中国名优茶及其影响

【摘要】 名优茶为茶中珍品。文章介绍了我国源远流长的名茶历史,及其形成色香味俱佳的生态环境条件,茶树品种,采制工艺技术和形成优质的生化物质基础。文章又对我国名优茶的种类、产量、产值及其发展现状作了介绍。而经久不衰的“名茶热”对我国的茶业经济、茶学研究,产生了极其深远的影响。特别在茶园栽培管理、茶树无性系良种培育、先进科学技术的推广应用(如名优茶机器的创制、生物保鲜技术、新型包装材料、采茶机、修剪机的推广等)、名优茶流通市场和茶文化方面的影响作了综合介绍。

【Abstract】 Famous Chinese teas are very rare. This paper not only introduces the long history of those teas but also the ecological condition, suitable cultivars, processing techniques and biochemical constitutes, as well as those factors which are vital important to formation of specific color, aroma and taste of those teas. It also gives introduction on classification, total output and output value as well as developing trend of famous Chinese teas. The "hot sale" of famous Chinese teas plays an important role on China’s tea production economy and tea research. This paper especially offers an overall introduction on cultivation management, breeding of clonal cultivars, extension and application of advanced technology (such as invention of tea processing machine for manufacture of quality tea, biotechnology for fresh-preserving, new type of packing material as well as the extension of tea plucker and pruner etc.).
