茶树中β-葡萄糖苷酶活性日变化规律研究

【摘要】 本实验研究了与茶叶香气有关的β-葡萄糖苷酶日周期变化。结果表明:上午酶活性逐渐增强,在中午12:00左右达到一天中最高峰,然后下降,下午4:00左右酶活性再次上升,6:00左右酶活性达到一天次高峰,随后便缓慢下降,次日凌晨2:00左右酶活性最低,尔后缓慢上升。一天中酶活性变化与温度、光强呈不完全正相关,与空气湿度呈不完全负相关。酶活性和呼吸强度日变化趋势基本一致,呼吸作用可能影响着该酶活性变化。

【Abstract】 The daily changes of β-glucosidase activity in tea plant that was related with the tea aroma was investigated . Results showed that the enzyme activity was increased gradually in the morning and reached the peak value at 12:00 (noon) , then dcreased gradually and raised again at about 16:00 afternoon, then reached the second peak value at 18:00 afternoon. After that it decreased gradually again and reached the lowest value at about 2:00 the next early morning. Then it increased slowly. The daily enzyme activity was not positively related to the temperature and light intensity as well as not negatively related to the air humidity. The daily changes of enzyme activity were basically similar to the daily changes of respiratory intensity. It is probably that the respiration influces the changes of enzyme activity.
