【Abstract】 Phytosterols belong to the steroids and have many important physiological functions. In this article, the chemical characteristics, main sources, absorption and metabolism of phytosterols were reviewed; then, the cholesterol-lowering effect of phytosterols and its action mechanism were summarized; at the end, the safety of phytosterols was evaluated and its application practicability in functional food and feed additives was analyzed.更多还原
