没食子酸及其衍生物抗氧化机制的ESR研究

【摘要】 没食子酸(GA)是为三羟基苯甲酸,它存在于许多植物和中药内,其系列衍生物有没食子酸甲酯(MG)、乙酯(EG).丙酯(PG)和丁酯(BG)等。经药物和临床证实,该类化合物具有抗血小板聚集.扩张血管.增加冠脉血流量等作用,并可促进活血化瘀、延缓衰老,能较好地应用于临床、同时由于这些化合物较强的抗氧化特性(特别是PG),因而在食品工业中可用做防腐剂.所有这些功效可能与其抗氧化和清除自由基等性能有关.为了能对临床合理用药和组方提供理论根据,我们在前而用循环伏安扫描法研究的同时,又通过ESR方法对没食子酸及其衍生物的抗氧化机制进行了探讨。
【Abstract】 As a series of antioxidant,gallic acid(GA)and its esters(MG,EG, PG and BG)could be used for the clinical examination and food industry.To provide thereotical basis for a further effective application,we have studied the antioxidized mechanism of GA and its esters by ESR spectra method.All of these compounds were oxidized in alc.0.2M NaOH solution automatically when exposed to air,which resulting in distinct corresponding ESR signals(Figure 1).Mechanism that GA and its derivatives were oxidized to quinones concerns to a semiquinones structure,and their active centres were all characterized as their para-hydroxyl position,In addition,another antioxidant GE(the fruit of Chinese wolfberry)was added during the oxidation of PG in basic medium,and its ability of antioxidation and clearing radicals was observed.In this process,signal intensity is diminished compared with the former examination at the same condition,and its kinetics was also studied(Figure 2).An electron-transferring explanation about this phenomenon was propound.
