可持续利用植物资源在香料合成中的应用

【摘要】 从可持续利用植物资源中获取的植物性天然香料是非常受消费者欢迎的一类香料,但其资源数量有限,生产成本越来越高,难以满足人们对香料不断增长的量的需求。以从可持续利用植物资源中获得的单一化学成分为原料,可以合成数以千计的合成香料,从这种途径制备的香料与以石化产品为原料制备的香料相比,在消费心理上更能够被消费者接受,满足了人们对香料来源越来越高的要求;从资源综合利用和环境保护方面考虑,源于可持续利用植物资源的合成香料符合可持续发展战略,应该优先发展。本文对在香料合成中有重要应用的部分植物资源及其所合成的香料进行了介绍,涉及目前允许使用的许多重要香料。
【Abstract】 Natural flavors and fragrances extracted from plant resources directly are very popular in the mar- ket.But it is hard to meet the increasing demands for flavors and fragrances by this way due to their high costs and limited resources.Thousands of synthetic flavor and fragrance compounds can be prepared from the iso- lates obtained from natural plants.These synthetic products are more acceptable by consumers compared those prepared from petroleum products.This method used natural isolates as starting materials meets the sustainable development strategy and should be put on a primary position in view of environmental protection and com- prehensive use of resources.Some important plant resources used in synthetic flavors and fragrances were reviewed and many important synthetic flavors and fragrances were involved.
