茶树菇的采后护色及热空气干燥方式研究

【摘要】 为解决茶树菇干制品的褐变问题,选用C6H8O7(柠檬酸)、C6H8O7(抗坏血酸)、CaCl2(氯化钙)等3种褐变抑制剂对采后干制前的茶树菇进行护色。结果表明,经护色处理的茶树菇干制品L值均有所提高,但同种抑制剂不同用量的护色效果存在明显差异(P<0.01),适宜用量调制的复合抑制剂,其护色效果优于单一抑制剂,呈现出协同、增效作用;茶树菇干制品L值最高的护色条件为CaCl2用量0.2g/100mL水,C6H8O7用量0.4g/100mL水,C6H8O6用量0.04g/100mL水,浸泡时间30min。以此为条件探讨了逐步升温干燥、直接恒温干燥及间隔干燥等3种热空气干燥方式,结果表明3种干燥方式均实用于茶树菇的干制,以逐步升温干燥方式的三值最高,褐变最低。

【Abstract】 In order to solve the problem of browning during the dried Agrocybe aegerita, three enzyme browning inhibitors inclding of C6H8O7,C6H8O7 and a mixture of 50%C6H8O7 and 50%C6H8O7 was used as Agrocybe aegerita from color browning before the drying,The results indicated that after color protection,the L values of the dried Agrocybe aegerita were all improved.However,different amount of one of the inhabitors had significant effect on color protection.The optimum combination of enzyme inhibitors it was showed the cooperative and inhanced effect.The effect of the compound inhabitor was better than that of the single inhibitor.The color protection condition of the highest L values of the dried Agrocybe aegerita was as the following:the amount of CaCl2 0.2/100mL water, C6H8O70.4g/100mL water and C6H8O70.04g/100mL water;the time of the immersion was 30min.Based on the above experimental result,three ways of hot-air drying were used to dry the Agrocybe aegerita,which were gradient improved temperature drying,direct perpetual temperature drying and intermittent temperature drying.The results showed that three ways of the drying were suitable to the drying process of Agrocybe aegerita.Among these ways of the drying,the best way was gradient improved temperature drying,with which the L values of the dried Agrocybe aegeritaits was the least and the degree of its browning was the lowest.
