【摘要】 目的更深入地了解城市居民的对油炸食品安全现状的认识情况。方法本文采用随机抽样方法对312憧广州市天河区市民进行了问卷调查。结果市民食用油炸食品的现象比较普遍,特别是青少年;市民对油炸食品卫生安全的重视程度有待加强,同时对油炸食品安全事件的关注程度普遍较低;市民对卫生部门在油炸食品安全管理上持有更多期望。结论应针对市民对油炸食品安全认识不足的情况,加强和改善油炸食品安全措施减少丙稀酰胺对人体的危害。更多还原

【Abstract】 OBJECTIVE To understand more about the circumstance of citizens’ knowledge on fried food safety.METHODS This article carried on a questionnaire to 312 citizens in Tianhe district of Guangzhou city,using the random sampling method.RESULTS The phenomenon of citizens eating fried food was prevailing,especially teenager.Citizens needed to strengthen the value degree on fried food safety.In the meantime,the cognition degree to safety event of fried food was generally low;Citizens held more expectations to the hygiene department in fried food safety management.CONCLUSION According to the condition that citizens had insufficient understanding of fried food safety,strength the safety measures in fried food,and reduce the harm on body of acrylamide.更多还原
