【摘要】 本文对铁核桃(Juglans sigillata Dode)主栽品种"漾泡"和"三台"的主要营养成分进行了分析测定,结果表明:"漾泡"和"三台"核桃仁中总糖物质的含量分别为5.833和7.841 g/100g, 淀粉的含量均少于1.0 g/100g,粗纤维的含量分别为5.04和6.05 g/100g:粗蛋白含量分别为18.31 和15.96 g/100g:粗脂肪的含量分别为67.58g/100g 和67.27g/100g:多酚的含量分别为175.75和 100.40mg 没食子酸/100g,PPC 值分别为610.19和109.89mg 牛血清清蛋白/100g。更多还原

【Abstract】 The main nutrition in the kernel of ‘Yangpao’ and ‘Santai’ was analyzed in this article.The results showed that in ‘Yangpao’ and ‘Santai’,the contents of total sugars were 5.833 and 7.841g/100g dry weight;the starch’s,less than 1.0g/100g dry weight;the crude fiber’s,5.04 and 6.05 g/100g dry weight;the crude protein,18.31 and 15.96 g/100g dry weight;the total fat,67.58 and 67.27 g dry weight;the total polyphenols,175.75 and 100.40mg Gallic acid/100g dry weight and PPC(Protein Precipitation Capacity),610.19 and 109.89mg/1008 dry weight.更多还原
