【摘要】 从国内12个省市征集荸荠资源77份,保存在国家种质武汉水生蔬菜资源圃,其中荸荠种70份、野荸荠种7份。评价了这些资源植物学性状,对营养成分进行了聚类分析。并对勐遮荸荠、孝感荸荠、苏州荸荠、桂林马蹄、菲律宾马蹄等5份优良资源进行了介绍。研究表明各资源在植物学性状上有一定差异。栽培荸荠和野生荸荠的株高在63-115.5 cm之间,平均为82 cm左右,无差异;分蘖幅度为110-140 cm;球茎大小有很大差异,栽培荸荠球茎横径平均3.1 cm,纵径平均2.1 cm,野生荸荠分别只有1.43 cm和1.39 cm;球茎单重差异也大,栽培荸荠平均12.7 g,野生荸荠1.7 g;球茎性状在70份栽培荸荠间差异也较大;对荸荠干物质、维生素C、可溶性糖、淀粉和蛋白质等营养成分测试后进行聚类分析,结合球茎的形状可将其分为适于生食或炒食、加工制清水马蹄、加工制淀粉等各种不同用途的类型。更多还原

【Abstract】 77 pieces of resource from 12 domestic provinces and cities were kept in Wuhan Resource Garden of the Aquatic Vegetable under County Germ Plasm. The resource is including 70 water chestnut plants,7 wild planting. The article appraise their botany properties , carry on cluster’s analysis to the nutritional labeling, introduce 5 fine resources, that is Mengzhe water chestnut, Xiaogan water chestnut, Suzhou water chestnut, Philippine water chestnut, etc. Each resource has certain difference on the botany properties. Corm size of cutivation is 3. 1 cm in horizontal average, 2. 1 cm in vertical average. That of wild one is 1. 43 cm and 1. 39 cm separately. The weight of cultivation on is 12. 7 g average. That of wild one is 1. 7 g. The two ones are same relatively in height 63-115. 5 cm, in length, 82 cm or so, in dividing range of tillers, 110-140 cm or so. After cluster’s analysis to such items as dry material, vitamin C, soluble candy, starch, protein, and other nutritional labeling. According to these items and form of corm, they can be classed into three usage type, the type which is suitable to stir-fry and eat raw, the type which is used to process water horse’s hoof, the type which make starch.更多还原
