冷激对柚果实酶活性变化及膜脂过氧化的影响

【摘要】 柚果实贮藏30d后,果皮组织中超氧化物歧化酶(SOD),过氧化物前(POD)及纤维素酶均有一个活性高峰,随后日趋下降.丙二醛含量(MDA)随贮藏时间延长而增加,贮藏30~60d后急剧上升,伴随发生汁胞粒化现象,经港融状态冰水冷激处理1~2.5h后,果皮中SOD活性保持较高水平,POD活性峰推迟一个月出现,且保持较低水平,纤维素酶活性在贮藏前期较低,60~90d后保持较高水平,丙二醛含量变化较平缓.冷激处理果实汁胞粒化现象推迟出现,且发生程度较轻.

【Abstract】 SOD , POD and cellulase activity reached peaks in the peels of Dianjiang pomelo fruits at 30 days after storage and then decreased 、MDA increased slightly in the ear-lier stage of storage , and increased sharply from 30 to 60 days companied with the appear-ance of fruit granulation. SOD activity in peels of fruits, treated by 1~2. 5h of cold shock , maintained at a relatively high level, with POD activity peek occurring one month later and maintaining at lower level. Cellulase activity decreased and maintained a lower level in ear-lier stage(30 - 60days) of storage ,and increased steadly therefor , while MDA content ac-cumulating gradually. The occurrence of fruit granulation was delayed and the incidense was reduced by cold - shock - treatment.
