不同采收期甜瓜果实的采后乙烯及品质变化

【摘要】 不同采收期甜瓜果实的采后乙烯释放速率和种子腔内乙烯浓度都有明显差异,随成熟度增加而明显增大,40DAA甜瓜果实采收时种子腔内乙烯浓度为50DAA采收时的19.6%, 常温最大释放速率为50DAA果实的49.6%;采后乙烯按一定规律变化,经两次高峰后果实开始腐烂变质;在常温和低温下存放的甜瓜采后乙烯变化不同,低温明显降低了乙烯释放速率,延长了第1次高峰到来的时间,延长了保存期;不同采收期甜瓜的保存期随成熟度增加而缩短,但差异不明显;采收期不同的甜瓜其SSC差异较大,VC、酸度差异不大,经贮藏后各物质含量差异减小;成熟度越大,SSC、VC、酸度经贮藏后的损失越少。

【Abstract】 The ethylene releasing rate and the concentration in seed cavity of different harvest date melons were studied, they both increase obviously with maturity. The ethylene concentration of melon fruits harvested 40 days after anthesis is only 19.6% of that of fruits harvested 50 days after anthesis, and the proportion of maxium ethylene releasing rate is 49. 6 % . The changes of ethylene is regular, after two peaks, the fruits begin to get rotten. There’s also diff-ference in ethylene changes of melons in cold storage and in normal storage. Low temperature reduces ethylene releasing rate and delays the time peaks, it also prolongs the storage, and storage time decreases with maturity increases, but the divergence is not obvious. The postharvest quality was also studied. Different harvest date has distinct effect on SSC content before storage, but not obviously on VC content and acidity, and the differences become less after storage. It indicates that the losses of SSC, VC and acidity decrease with maturity after storage.
