【Abstract】 This paper has studied the total sugar,total acid,vitamine C, pigment,amino acids and inorganic elements in black currant fruit. The results showed that there were plentiful vitamine C, pigment, inorganic elements and 16 amino acids in it. There are 7 essential amino acids among those amino acids. It provides scientific basis for further development and comprehensive utilization of the black currant fruit.更多还原
