薄膜包装嫩茎花椰菜的采后保鲜因子

【摘要】 嫩茎花椰菜是一种具有呼吸高峰的蔬菜;采后用聚乙烯薄膜包装后延缓了可溶性蛋白和叶绿素的降解;花球置于饱和湿度的环境中,不表现薄膜密封包装效应;降低包装环境的湿度对可溶性蛋白,特别是叶绿素含量的变化没有显著的影响,然而花球紧实度却大大降低。研究表明:薄膜密封包装对嫩茎花椰菜采后保鲜的关键因素是改变了花球所处环境的气体条件,在此前提下,提高环境湿度,可进一步增强保鲜的效果。

【Abstract】 The rate of respiration of broccoli (Brassica oleracea var. Italica) showed climacteric change after harvest. The degradation ofsoluble protein and chlorophyll was delayed in broccoli packaged with polyethylene film. However, broccoli in water-saturated atmosphere did not show the same effects. Changes of soluble protein , especially changes of chlorophyll, were not effected signifecantly by including hygroscopic silicon in the sealed film packaging enclosure which reduced the humidity, but compectness of flower curds decreased rapicly. These results indicated that the fresh-keeping effector of sealed film packaging on broccoli was mainly due to the modified atmosphere in the packaging enclosure and water-saturated atmosphere played a supplementary role.
