水稻品种氮素代谢特性与稻米主要品质性状关系的研究

【摘要】 以不同食味品质类型水稻品种为供试材料,研究了水稻植株内氮素含量、转化利用与品质性状之间的关系。结果表明:稻米食味品质与水稻植株齐穗期和成熟期含氮水平存在一定的相关性,食味较差类型品种地上各器官含氮量高,食味较佳类型品种较低。不同食味品种氮素吸收、转化、积累能力不同,氮素转运量、转运氮贡献率、氮收获指数对稻米食味品质食味影响较大,食味品质较差品种在成熟后各器官氮残留量高。相关分析和典范相关分析表明,开花前氮同化量、总同化量、氮素转运量、转运氮贡献率、氮收获指数与稻米主要品质性状存在相关关系,其中稻米蛋白质含量和直链淀粉含量受植株氮代谢影响最大,高蛋白质含量品种有较强的氮素吸收转化能力。以上研究表明,可以通过氮肥的运筹,调节植株的氮素吸收利用来提高稻米品质。

【Abstract】 The relationships between plant nitrogen content,transfer and utilization and grain quality in different taste rice varieties were studied.The results indicated that there were some relationships between grain quality and nitrogen content of plant at heading and matur- ing stage,good taste varieties showed lower nitrogen content in upper organs of plant,contrary to the bad taste varieties.The varieties of different tastes were different in absorbing,assimilation and accumulation of nitrogen,the taste quality was affected rather obviously by the nitrogen transfer amount,nitrogen contribution rate to grain and nitrogen index about rice plant nitrogen metabolisms.The nitrogen remains of rice plant after mature were higher in the bad taste varieties.There were correlations between grain quality characters and the factors of rice plant nitrogen metabolisms(i.e,nitrogen assimilation pre-anthesis,total assimilation,transfer amount,nitrogen contribu- tion rate to grain,nitrogen index),from the correlation analysis and the canonial correlation analysis,grain protein content and grain amy- lose content were affected by plant nitrogen metabolisms more obviously than the others,the higher grain protein content of varieties had better ability of nitrogen absorbing,transfer and accumulation.From the results above,in order to improve grain quality,especially taste quality,nitrogen fertilizer management could be used to adjust the nitrogen absorbing and utilization of rice plant.
