高膳食纤维玉米饼干的研究

【摘要】 抗性淀粉是从玉米淀粉中提取的。抗性淀粉是天然存在,不被健康人体小肠消化而能被大肠微生物群作用的那部分淀粉。它是高膳食纤维食品的良好原料。其具有预防结肠癌和糖尿病、治疗腹泻、提高人体免疫能力等功效。很多食品抗性淀粉的含量很少,不具有抗性淀粉的生理功效。所以开发含抗性淀粉的食品对人体健康有潜在意义。本文以低面筋面粉和抗性淀粉为主要原料制成高膳食纤维的玉米饼干并对其品质进行评价。

【Abstract】 Resistant starch is produced by maize starch. Resistant starch is natural,which is the portion of ingested starchy material that escapes digestion in the small intestine, and is acted upon by microflora in the large intestine. It is a kind of new material to high dietary fiber food. It has had functions of preventing colonic cancer and diabetes, remedial diarrthea, and improving immunity function of human body etc. There is a litter resistant starch in many foods. Those foods have not RS physiologic efficacy. So developing RS food will have the potential benefits to human health. The paper discusses to make a high fiber biscuit by Low gluten flour and resistant starch,and studies RS to influence on quality of maize biscuit.
