【摘要】 本试验旨在比较鸭螺纹蛋与正常鸭蛋的蛋品质及蛋壳中矿物质元素的差别。试验收集同批次鸭螺纹蛋与正常蛋两批,测定蛋品质与蛋壳中矿物元素含量,结果表明:螺纹鸭蛋的蛋白高度与哈氏单位大于正常鸭蛋(P<0.05),蛋壳强度、蛋黄色泽、蛋壳厚度与正常鸭蛋无显著差异,而蛋壳重小于正常鸭蛋(p<0.10),蛋壳重占蛋重的比例低于正常蛋(P<0.05);螺纹蛋蛋壳及膜中矿物质含量与正常蛋无显著差异(P>0.05)。结果表明,螺纹鸭蛋影响蛋壳和蛋白品质,对蛋壳矿物质无显著影响。更多还原

【Abstract】 This experiment was aimed to research egg quality and the content of mineral elements of eggshell of fringe eggs and normal eggs.Twenty-five fringe eggs and twenty-five normal eggs of Beijing duck in November 2007 and twenty-three fringe eggs and normal eggs in March 2008 were used to measure egg quality and the mineral elements content of egg-shell in the experiment.The result showed that the albumen height and Haugh units(HU) of fringe eggs were higher than normal eggs,and the shell strength and the eggshell weight of the egg weight ratio of fringe eggs were smaller than that of normal eggs.The calcium and phosphorus content of eggshell of fringe eggs were less than that of normal eggs.It can be concluded that there was difference in egg quality and the content of mineral elements of eggshell between fringe eggs and the normal ones of duck.更多还原
