鹅不同杂交组合体尺、屠宰性能、肉品质比较研究

【摘要】 对90日龄鹅8个杂交组合体尺、屠宰性能、常规肉品质和肌肉成分进行测定,并对各指标进行比较分析。结果表明,WXSC组合除髋骨宽外其它各项体尺指标都是最大。而平均体重、体斜长、胸深、胸宽、胫长、颈长、半潜水长都是SHSC组合测定数据最小。活重、屠体重、腹脂重都以WXSC组合为最高,分别为3291.36 g、2956.46 g、77.84 g。SHWL组合屠宰率为92.96%,高于其它7个组合的水平。剪切力值SHT最小只有3.09kg,WXWL最大3.78kg。系水力SCWL组合最高66.46%,WXSC组合最低61.48%。水分含量SHWL最高73.05%,SCT组合最低66.77%。蛋白含量SHT组合最高23.32%,SHWL最低21.94%。脂肪含量SHT组合最高3.06%,SCWL组合最低1.67%。常规肉品质与肌肉成分相关性分析,pH值与剪切力、肉色呈显著相关性,相关系数为0.222、0.208;水分含量和系水力之间相关性显著,相关系数为0.203;其它各项指标间相关性不显著。
【Abstract】 Body measurements,slaughter traits and general meat quality were measured in the geese of 8 crossbreed combinations at the age of 90 days,and the correlative parameters of each index were analyzed. The results were as follows:except thurl width,the other indexes of WXSC combinations were the biggest; and the average body weight,body slope length,breast depth,breast width,shank length,neck length and half-diving depth of SHSC combinations were the least.The live weight(3291.36 g) slaughter weight (2956.46 g) and abdomen fat weight(77.84 g) of WXSC combinations ware the biggest.The slaughter rate of SHWL combinations was the highest(92.96%).The Shear force of SHT and WXWL combinations were the lowest(3.09 kg) and the highest(3.78kg),respectively.The water holding capacities of SCWL and WXSC combinations were the highest(66.46%) and the lowest(61.48%),respectively.The percentage of moisture content of SHWL and SCT combinations were the highest(73.05%) and the lowest(66.77%), respectively.The crude protein content of SHT and SHWL combinations were the highest(23.32%) and the lowest(21.94%),respectively.The percentage of crude fat content of SHT and SCWL combinations were the highest(3.06%) and the lowest(1.67%),respectively.The correlation between pH value with Shear force and between pH value with flesh color were 0.222 and 0.208,respectively;the correlation between the percentage of moisture content and the water holding capacities was 0.203,there was no significant correlation between each another indexes.
