【摘要】 目的探讨硫磺熏蒸对山药中有效成分尿囊素的影响。方法以尿囊素为指标,选择硫磺用量、熏蒸时间、熏蒸次数3个因素,用L₉（3⁴）正交表,考察不同熏蒸工艺尿囊素含量并与未熏蒸山药进行比较。结果:硫磺用量为100g/m³,熏蒸1次,熏蒸2h,尿囊素含量最高。结论:不同熏蒸工艺对山药中尿囊素含量有一定影响,且有随硫磺用量增加、熏蒸时间延长、次数增加而减少的趋势。更多还原
