卢氏绿壳蛋鸡和贵妃鸡蛋的矿物质元素含量分析

【摘要】 本试验分别测定了贵妃鸡、卢氏绿壳蛋鸡和隐性白鸡3个品种鸡蛋蛋壳、蛋白和蛋黄中的Ca、Mg、P、Fe、Mn、Zn、Cu、Pb、Cd 9种矿物质元素的含量。结果表明,贵妃鸡蛋壳中Mg、P、Cu含量显著高于卢氏绿壳鸡蛋(P<0.05),但与隐性白鸡鸡蛋差异不显著;卢氏绿壳蛋鸡蛋壳中Zn含量显著高于其它2个品种(P<0.05);隐性白鸡蛋壳中Fe含量显著高于其它2个品种(P<0.05)。贵妃鸡蛋白中Fe显著高于其它2个品种(P<0.05);卢氏绿壳蛋鸡蛋白中Ca含量最高;其它元素在3个品种间差异不显著(P>0.05)。贵妃鸡蛋黄中的Ca、Mg、Fe、Cu含量较高,其中Fe含量显著高于隐性白鸡(P<0.05);蛋黄中其它元素差异不显著(P>0.05)。所有矿物质元素中,Pb含量最低,并且没有检测出Cd。结果还显示,鸡蛋蛋黄中的矿物质元素含量远高于蛋白。仅从蛋白和蛋黄中矿物质元素的含量来看,贵妃鸡蛋的矿物质营养价值最高,其次是绿壳鸡蛋、隐性白鸡鸡蛋。
【Abstract】 This experiment determined the mineral contents of Ca,Mg,P,Fe,Mn,Zn,Mn,Pb and Cd of eggshell,albumen and yolk of eggs from Guifei,Lushi green shell and recessive white-feather laying hens.The results showed that the concentrations of Mg,P and Cu in egg shell of Guifei chicken were higher that of Lushi green-shell chickens(P<0.05),but there was no difference compared to recessive white-feather chickens.The content of Zn in eggshell for Lushi green-shell chickens was higher than other two species of hens(P<0.05),and the Fe content in eggshell of recessive white-feather chickens was the highest(P< 0.05).The Fe content in albumen of Guifei chicken was higher that other two breeds(P<0.05) and the Ca content was the highest for Lushi green-shell hens(P<0.05),and there were no significant variations in the contents of other determined minerals among the three breeds(P>0.05).The contents of Ca,Mg,Fe and Cu in yolk of Guifei chickens were higher,and the content of Fe in Guifei yolk was significant higher than that of recessive white-feather chickens(P<0.05),and the contents of other minerals determined in yolk were not significant(P>0.05).The content of Pb was the lowest in the parts of eggs and the content of Cd could not be detected in the specimens.Additionally,the mineral contents in yolk were significantly higher than,in albumen,and Guifei chicken had the highest content of mineral and followed by Lushi rreen shell and recessive while feather chickens.
