低场核磁考察红花籽油弛豫特性

【摘要】 低场核磁共振技术是一种非常有潜力的油脂快速检测技术。与传统的油脂测量方法相比,核磁共振法更能够保持样品的完整性;操作简单快速,每个样品的测量时间只需8s,重复性高;样品无需进行复杂的前处理即可直接检测;定量测定无需标样;测量精确高。本文应用低场核磁共振方法分别测定了不同类型的红花籽油(酶解红花籽油、石油醚萃取红花籽油、正己烷萃取红花籽油)与四种食用植物油(葵花籽油、大豆油、芝麻油和花生油)掺伪后的弛豫图谱,通过对多组分T2弛豫图谱以及峰面积比例S21和单组份弛豫时间T21分析,发现随着食用油掺入量的增多,T21峰不断向左平移,弛豫时间不断减小,说明油脂的不饱和度不断增加,S21的变化趋势随着掺伪量的增加逐渐增大,说明S21和T21呈现良好的规律性。结果表明。低场核磁共振技术可有效的检测T21和S21红花籽油掺伪量的变化情况,可为红花籽油掺伪的快速检测提供基础。
【Abstract】 Low field nuclear magnetic resonance(L-NMR) is the potential technology which can quickly detect grease.L-NMR is more able to maintain the integrity of the sample compared with the traditional measurement methods;Maneuverability and repeatability,each sample measuring time needs 8 s;Samples can direct detection without complex pretreatment;Quantitative determination without the prototype;Precision is high.In this paper,L-NMR method were determined for different types of safflower oil(enzymolysis of safflower oil,petroleum ether extraction of safflower oil,N-hexane extraction of safflower oil) and four types of edible vegetable oils(sunflower oil,soybean oil,sesame oil and peanut oil) after the adulteration of relaxation spectrum,through to the T2 relaxation spectra,the S21 peak area ratio and single-package relaxation time T21 analyzed and found that along with the increase in oil mix,T21 peak shifted to the left constantly,relaxation time decreased,oil saturation increasing,the change trend of S21 was gradually increasing with the increment of adulteration,S21 and T21 presented good regularity.The results show that L-NMR technology can effectively detect T21 and S21 amount of safflower oil changes,and for the rapid detection of adulteration safflower oil provides the basis.
