包装和贮藏条件对柑橘罐头营养和感官品质的影响

【摘要】 【目的】本实验旨在研究包装材料和贮藏条件对柑橘罐头营养和感官品质的影响。【方法】以马口铁、玻璃瓶、高阻隔瓶和普通塑料瓶为包装材料的柑橘罐头,分别置于不同温度、光照条件下贮藏,定期取样测定柑橘罐头的营养和感官品质。【结果】在同一贮藏温度下,四种包装材料的橘瓣罐头的营养和感官品质均随着贮藏时间的延长而降低,普通塑料瓶罐头营养成分损失最多,其它三种包装材料的橘瓣罐头的营养成分损失较少,其中马口铁罐头营养损失最少、玻璃瓶次之,高阻隔瓶罐头的营养损失略高于玻璃瓶罐头;在同一贮藏时间下,随着贮藏温度的升高,四种包装材料的橘瓣罐头营养损失增加,褐变程度加重,罐头颜色变暗,黄色度下降,红色度上升,色差增大,且在贮藏过程中,马口铁、玻璃瓶和高阻隔瓶包装的橘瓣罐头的褐变指数随贮藏温度变化满足阿伦尼乌斯方程;与遮光条件相比,光照条件下塑料瓶和玻璃瓶罐头中类胡萝卜素、Vc、总酚、总黄酮的含量显著降低,而高阻隔软包装罐头则变化不显著。【结论】低温有利于柑橘罐头的贮藏,马口铁和高阻隔瓶两种包装的柑橘罐头贮藏品质较好,在光照条件下,玻璃瓶包装的柑橘罐头品质降低较快,而普通塑料瓶不宜作为柑橘罐头的包装材料。

【Abstract】 [Purpose]the impact of packaging materials and storage conditions on canned citrus nutritional and sensory quality were studied in this experiment.[Methods]With tin,glass botdes,high separation and ordinary plastic bottles for packaging materials,5,15,25 and 40 ℃ were placed in incubators storage,periodic random sampling,determination of nutritional and sensory quality of canned citrus;In addition to plastic bottle,glass bottle and high barrier bottle of three kinds of packaging cans of shading,ambient storage,study the effect of light on canned citrus fruit quality.[Results]At the same storage temperature,nutritional and sensory quality of canned orange petals with four packaging materials are decreased with the extension of storage time,The loss of nutrient contents was most in ordinary plastic bottles,the loss of nutrients were less in the other three kinds of packaging materials of citrus can.when storage at the same time,as the extension of storage temperature,the loss of nutrition and browning index increased,while the brightness(L~* value) and yellowness(b~* value) decreased,and the redness(a~* value) 、 the chromatic difference(AE) increased in citrus can of four kinds of packaging materials.Browning index changing with the temperature meets Arrhenius equation in citrus can of tinplate,glass bottles and high separation package during storage.With glass bottles,high barrier bottles and plastic bottles for packaging materials to research the effect of light on nutrition and sensory quality in citrus can during storage.compared with the shading conditions,the nutrition content Significantly declined in Ordinary plastic bottle and glass bottle under lighting condition.While the effect of light condition on the content of total flavonoids,Vitamin C,carotenoids,total phenol and the scavenging ability on DPPH · were not significant in the high barrier package material.[Conclusion]Cold storage in favour of citrus canned、 Tin and high blocking bottles of two kinds of packaging of citrus canned have good storage quality,Under the light conditions,Glass bottle packaging canned citrus quality decrease quickly,and ordinary plastic bottles should not be used as canned citrus packing material
