超高压前处理对香菇热风干燥过程中甲醛含量的影响

【摘要】 半胱氨酰亚砜裂解酶(γ-glutamyltranspeptidase,GGT)和γ-谷氨酰转肽酶(S-alkyl-L-cysteinesulfoxidelyase,C-S lyase)是香菇酶解过程中生成甲醛和含硫风味物质的两个关键酶。本实验研究了超高压(UHP)前处理对烘干过程中香菇甲醛含量的影响。实验表明,经UHP前处理(400MPa,10min)的香菇样品热风烘干后的甲醛含量为56.30 mg·Kg-1,比对照低83.62%(P<0.01),GGT和C-S lyase酶活分别是4.17和26.08 umo1·g-1,分别比对照低44.52%和46.75%(P<0.01)。热风干燥后,对照样品的含硫化合物相对含量均有升高,而经UHP处理的样品含硫化合物成分显著改变(二甲基二硫醚和二甲基三硫醚未检出,1,2,4,5-Tetrathiane和1,2,4-Trithiolane比对照低26.4%和97.6%),以上说明UHP处理可以通过改变香菇代谢、抑制酶活的方式,显著抑制烘干后香菇甲醛含量的增长(P<0.01)。
【Abstract】 γ-glutamyl transpeptidase(GGT) and S-alkyl-L-cysteine sulfoxidelyase(C-S lyase) were the two key metabolic enzymes in the formation of formaldehyde and sulfur-containing heterocyclic compounds of shiitake mushrooms.The aim of this study was to research the effects of Ultra High Pressure(UHP)preliminary treatment on formaldehyde content of shiitake mushrooms during hot air drying process.The results showed that at the end of hot air drying,the GGT and C-S lyase enzyme activities of UHP(400MPa,10min) preliminary treatment samples were 4.17 and 26.08 umol g-1,which were 44.52%and 46.75%lower than control samples(P<0.01),the formaldehyde content was 56.30 mg Kg-1.which was 83.62%less than control samples(P<0.01).The relative amount of sulfur-containing heterocyclic compounds in control sam- ples had an increase after hot air drying,There were considerable differences between control and UHP samples(dimethyl sulfide and dimethyl trisulfide were not found;1,2,4-trithiolane and 1,2,4,5-tetrathiane decreased 26.4%and 97.6%).These results indicated that UHP preliminary treatment could significantly inhibit the GGT and C-S lyase enzyme activities,decrease formaldehyde and sulfur-containing compounds of shiitake mushrooms during hot air drying process.
