油脂粘度的新型快速检测方法探索

【摘要】 为了探索油脂粘度的快速检测方法,更好的研究油脂的流变性,使用快速粘度分析仪(Rapid Visco Analyser,RVA)测定棕榈油及混合油的粘度。考察了RVA转速、测试时间及测试温度对棕榈油粘度的影响。结果表明:油脂的粘度增加与RVA转速的增加并不完全符合牛顿第一定律,在50~350 rpm测试范围内,得出棕榈油粘度与测试转速的模型为:μ=0.19S-1400.99/S+76.02;随着测试温度升高,油脂粘度下降,模拟出粘度与温度关系曲线方程为:lnμ=3.33+45.85/(T+13);在棕榈油中添加椰子油,粘度下降,椰油添加量越多,粘度下降值越大;对于棕榈油粘度的检测,最佳的适用条件为:测试温度25℃,测试转速设定在150 rpm~200 rpm范围内,检测时间在5~7 min。说明RVA是一种可以快速检测油脂粘度的新型检测方法。

【Abstract】 In this paper,the viscosities of palm oil and blended oil were determined with Rapid Visco Analyser(RVA) to explore a new rapid analysis method of oil viscosity and research the theology of oil better.The effect of rotational speed,testing-time and testing-temperature on the viscosity was discussed.The results showed that the increase of oil viscosity with increase in the speed was not fully consistent with Newton’s First Law.In the range of 50~350 rpm,the model of palm oil viscosity and testing-speed was thatμ= 0.19 S-1400.99/S +76.02.The viscosity of oil decreased with the increase in testing-temperature,and the correlation between viscosity and temperature was lnμ=3.33 + 45.85/(T + 13).The viscosity of palm oil decreased with the addition of coconut oil,that the more addition of coconut oil,the greater the viscosity decreased.For the determination of palm oil viscosity, the best of condition was that testing-temperature 25℃,testing-speed in the range of 150 rpm~200 rpm,and testing-time 5~7 min. Theses results indicated that The RVA is a new rapid analysis method of oil viscosity.
